Happy Australia Day! (Ok... so I missed the mark yesterday)
Our day was spent with the Mr. taking the boys to Bunnings for a few items in the morning while I got some sewing done. :) Yippee! I actually got something finished, so I can't wait to show soon! (Soon, soon, I promise!)
They came home with these cute Australian Flags.
Apparently they went driving around the neighbourhood so they could fly their flags - and had a total blast!
But I digress... I was going to share with you the gingernut ball recipe that I used for when we had friends over for dinner. I adapted it to suit since I have made it before.
Gingernut Balls
Ingredients:
250g packet gingernut biscuits (some brands crush better than others)
4 1/2 Sanitarium Weet-bix
½ cup chopped crystallised ginger
½ cup chopped dried apricots
½ cup sultanas
400g can Skim sweetened condensed milk (I use Nestle, I find other brands taste odd to me)
Dessicated coconut for rolling balls in.
Method:
Throw gingernuts in a food processor and process till there are small lumps. Place in bowl
Crush Weet-Bix, and add to bowl.
Add all other ingredients except coconut. Mix thoroughly.
Form into balls and roll in coconut. Refrigerate (this helps them to hold their shape, and I like the taste of them better when they are cool... it's up to you really!)

Gidday 'S'. I'm in Australia too and I just spotted your post on Chef in Training. I've never heard of Gingernut balls but they sound so good. I'm going to make Apricot balls for the lunchboxes this weekend. ReplyDeleteHi Cate! Gingernut are a round flat biscuit, that tastes like ginger. They are crunchy like Arnott's choc ripple biscuits, but a little bit harder. Weet Bix are a dry breakfast biscuit cereal that you generally eat with milk. Just ask the Australian Cricket team! 😉
